We love teaching newbies the tricks of the trade, and you'll be casting like a pro in no time.

Top Catches This Season

Alright, let's talk fish. Panama City Beach is teeming with some real beauties, and we're going after the cream of the crop. King Mackerel are always a favorite – these speedsters will give your arms a workout and make for some killer fish stories. Mahi-Mahi, or Dolphinfish as some folks call 'em, are not only a blast to catch but also make for some mighty fine eating. And let's not forget about the powerhouse Amberjacks – these bruisers will test your strength and make you earn your bragging rights.

Species You'll Want to Hook

King Mackerel: These sleek, silver missiles are the sprinters of the sea. They're known for their blistering runs and aerial acrobatics when hooked. Kings typically range from 10 to 30 pounds, but don't be surprised if you hook into a 50-pounder! Spring and fall are prime times to target these speedsters, and there's nothing quite like the screaming reel when a King hits your bait.

Mahi Mahi: Also known as Dorado or Dolphinfish, these colorful beauties are a sight to behold. They're famous for their vibrant blue-green and gold colors that seem to change as they fight. Mahi are incredibly acrobatic, often leaping clear out of the water multiple times during the fight. They're most abundant in the warmer months and are not only fun to catch but also delicious on the plate.

Greater Amberjack: Fondly called "reef donkeys" by anglers, these powerful fish are the ultimate test of strength. Amberjacks typically hang around deep-water structures and can grow to over 100 pounds. When you hook one, be ready for a battle – they're known for their stamina and will often try to dive back to the bottom. The challenge of landing a big AJ is what keeps many anglers coming back for more.

Cobia: These curious fish are sometimes called "lemonfish" due to their color. Cobia are known for their intelligence and can be finicky, making them a prized catch for anglers. They're often found near structures or following large marine animals like sharks or rays. Spring is the best time to target them as they migrate along the coast. A 30 to 50-pound Cobia will give you a fight to remember.

Red Snapper: The crown jewel of Gulf bottom fishing, Red Snapper are as beautiful as they are tasty. With their bright red color and firm, white flesh, they're a favorite for both sport and table. These fish typically hang around reefs and wrecks, and catching them requires finesse to coax them away from their structure. The season for Red Snapper is carefully regulated, but when it's open, it's some of the best fishing you can experience in the Gulf.

Why Anglers Keep Coming Back

It's not just about the fish – though that's a big part of it. What keeps folks coming back to Laid Back Fishing Charters is the whole package. Learn more about the species

Cobia

Cobia are one of those fish that'll make you do a double-take. They look like sharks cruising the surface, but they're actually more closely related to remoras. We see 'em here from spring through fall, often following big rays or hanging around buoys and wrecks. Average size is 20-40 pounds, but 60-pounders aren't rare. Cobia are curious and aggressive, which makes sight-fishing for them a blast. They also put up a stubborn, powerful fight. The meat's excellent - firm and white with a mild flavor. To land one, keep your eyes peeled and have a heavy jig or live eel ready to cast. Once hooked, be ready for some long runs and maybe even some acrobatics. Just don't horse them in - cobia have soft mouths and can shake hooks easily if you're not careful.

Cobia

Greater Amberjack

Greater Amberjack are bruisers, plain and simple. These reef-dwelling tanks average 30-50 pounds but can top 100. You'll find them around deep wrecks and rocky bottoms, usually 60-240 feet down. Spring and fall are prime seasons as they move between spawning and feeding grounds. Anglers love AJs for their raw power - hooking one is like trying to stop a freight train. They're not the best eating, but the fight more than makes up for it. Live bait's your best bet - big blue runners or small bonito. Drop 'em down and hang on tight. Once hooked, pump and wind hard to keep 'em from diving back to structure. And don't forget a good stretch afterward - these fish will work muscles you didn't know you had!

Greater Amberjack

King Mackerel

King Mackerel are speedy predators that'll test your skills. These sleek fish typically run 20-40 pounds but can top 90. Look for them in waters 40-150 feet deep, often near reefs or wrecks. They're most active in warmer months when water temps hit the high 60s. Anglers love 'em for their blistering runs and acrobatic leaps. The meat's good eating too, though watch the mercury if you're pregnant. To land one, try slow-trolling live bait like blue runners or menhaden. Keep your drag set light - these guys can smoke a reel in seconds. A wire leader's a must to prevent bite-offs. When you hook up, get ready for a fight - Kings don't give up easy.

King Mackerel

Mahi Mahi or Common Dolphinfish

Mahi Mahi, or dorado, are one of the prettiest fish you'll ever see - electric blue and gold that fades fast once they're out of the water. We find 'em year-round here, but they really fire up in summer. Look for floating debris or weed lines, that's where they like to hang out. Average size is 15-30 pounds, but 50-pounders aren't unheard of. These acrobats put on a show when hooked, with wild jumps and blistering runs. The meat's excellent too - light, flaky, and mild. For best results, troll rigged ballyhoo or cedar plugs near the surface. Once you spot a school, casting live bait or bright jigs can be deadly. Just remember, they travel in packs, so get ready for multiple hookups!

Mahi Mahi or Common Dolphinfish

Red Snapper

Red Snapper are the bread and butter of Gulf bottom fishing. These ruby-red beauties hang out around reefs and wrecks in 60-300 feet of water. Most run 5-15 pounds, but 20-pounders aren't uncommon. We target them year-round, but summer's peak season when the big spawners move in. Snappers are prized for their firm, white meat and for the stout fight they put up. To catch 'em, you'll need heavy tackle and strong arms. Drop down squid, cigar minnows, or live pinfish on a chicken rig. When you feel the thump, reel fast and hard to pull 'em away from structure. Once you get 'em coming, don't let up - snappers are masters at turning back to their hidey-holes. Fresh snapper on the grill is hard to beat, so be sure to keep a few for dinner!
